DIVINE SALTED CARAMEL CHOCOLATE BROWNIES


The best chocolate brownies ever....




Brownies:

Step 1- Make your favourite brownie recipe,you could use a shop bought packet recipe, my brownie recipe (http://ellaspantry.blogspot.co.uk/2013/02/choccy-brownies.html) or the recipe I used ( http://www.bbcgoodfood.com/recipes/2121648/bestever-chocolate-raspberry-brownies without the raspberries)

step 2- Leave to cool on a windowsill or in the fridge.

Topping:

Ingredients:
For The Caramel:
200g marg
397g (about) can of condensed milk
4 tbsp golden syrup
1 tsp sea salt crystals

For the top: 
200g dark chocolate

Recipe:

Step 1 - Put all the ingredients in a large pan and boil vigorously on a high/medium heat, stirring continuously so it doesn't burn for around 10 minutes.





Step 2 - Once the mixture has the consitency of caramel, remove from the heat and leave to cool by an open window.




NOTE- DO NOT BE TEMPTED TO STICK YOUR FINGER IN THE CARAMEL, IT IS VERY HOT AND WILL BADLY BURN YOU!


Step 3 - Once the brownie and caramel have both cooled, poor the caramel over the brownie and gently spread it all over



Step 4 - Melt the chocolate and immediatly top the caramel brownie with it, spread it carefully so as not to move the caramel



Step 5 - Leave to set in the fridge so the chocolate becomes nice and hard

NOTE - This recipe is very rich, so small pieces are better, but it is so delicious!

COFFEE KISSES

The most delicious after noon tea ever


Ingredients: 
175 g self raising flour
75 g caster sugar
75 g margarine
1 egg, beaten
2 tsp instant coffee dissolved in 1tbsp hot water

For icing:
50 g marg
100 g icing sugar
2 tsps coffee essence

Utensils:
mixing bowl
wooden spoon
baking tray
baking paper
cooling rack


Step 1- preheat oven to 180 degrees celcius, line baking trays with grease proof paper


Step 2 - stir the flour, sugar and marg together



Step 3 - mix in the egg and coffee, add a little milk if necessary



Step 4 - roll into walnut sized balls and bake, be careful ,they spread a lot! 


note : make sure to make an even amount as they get sandwiched together

Step 5 - mix all the icing ingrediants together and sandwhich 2 biscuits together with a spoon full of icing



note : i made mine mocha flavoured by adding a little cocoa powder to the mixture and icing!

CREAMY LEMONY PASTA WITH SAUSAGE MEATBALLS

Pasta with a creamy, lemony sauce and sausage meatballs!


Serves 4- 6
Finished product!

Ingredients: 
3 eggs
Basil
250 ml double cream
Zest of 1 Lemon
8 pork or quorn sausages
Tagliatelli (the right amount for the amount of people eating)
30 g parmesan (more if you like cheese!)



Utensils: 
Frying pan
Large pan for pasta
Cheese grater
Colander

Step 1 - start your pasta cooking in a pan of boiling water

Step 2 - peel the skin off of the sausages





Step 3 - tear of pieces of sausage and roll them into bite size balls (use your hands)



Step 4 - Put a small amount of vegetable oil in a hot frying pan and fry your meatballs, careful so they don't burn.





Step 5 -  grate the lemon zest



Step 6 - Beat the eggs





Step 7 - Grate the cheese 



Step 8 - add the cheese, cream and lemon zest to the eggs and mix it all up



Step 9 - Season with pepper



Step 10 - drain the pasta when it is cooked and immediately stir the sauce into the pasta, add the meatballs and serve.



step 11- Garnish with some chopped basil and extra parmesan



 Hope you enjoy this recipe, try adding a little lemon juice as well

DAD'S FAVOURITE - JAM BUNS


JAM BUNS



 Ingredients:

16 oz self raising flour (maybe a little extra)
8 oz marg
6 oz caster sugar( a little extra for dusting)
1 large egg
a little milk 
 a cap full of vanilla extract
raspberry/ strawberry jam

Utensils

Wooden Spoon
Large Mixing Bowl
Baking Tray
Grease proof paper
Weighing Scales




Method:

preheat oven to 180 degrees/ gas mark 5

Step 1 - Rub flour and marg together until it looks like breadcrumbs(use your fingers if you don't mind a bit of mess)





Step 2 - beat your egg



Step 3 - Add the sugar, vanilla extract and beaten egg to the breadcrumb mixture and stir



Step 4 - add a small amount of milk and stir



(when you're done, the mixture should look like the picture below, if it is much sloppier add a little more flour, if it is much drier add a little more milk)



Step 5 - roll the dough into golf sized balls and place on a baking tray (with grease proof paper)




Step 6 - press your finger into each ball to make a small hole (don't go all the way through the dough) fill each hole with jam then sprinkle each bun with caster sugar.



Step 7 - bake for 12-15 mins

BEST BAKERY


Hey guys! something a bit different today, for mothers day this year (i know it was over a week ago, i'm a bit behind on this ha ha!) we went to a lovely little cafe in Helmseley. The cafe was called 'Castlegate Cafe and Bakery'. we had a lovely lunch and then, for desert, i had the most delicious lemon cake!



Defiantly recommend this cafe, as all the cakes are hand baked by the owner!
